Eat chocolate, stay lean - read it to believe it

Anyone that knows me at all knows that I have a love affair with chocolate. So I had to share this tidbit of good news about new potential health benefits of chocolate. We’ve been hearing for some time that chocolate, particularly dark chocolate, is good for us and the antioxidant properties of chocolate have been linked favorably with insulin sensitivity, blood pressure and LDL cholesterol levels.   News this week focused on the association between chocolate and body mass index (a ratio of body weight to height used to estimate body fat). In the study published by Golomb from the University of California San Diego, they asked a simple question to approximately 1000 men and women: “How many times a week do you consume chocolate?” The individuals that consumed chocolate more frequently had consistently lower BMIs. And this relationship was maintained even when factors such as age, sex, activity levels, calorie and saturated fat consumption, and mood were factored in. Wh...

Chocolate Chip Pumpkin Bread

Fall is one of my favorite seasons. After a long, hot and sticky summer, I look forward to the chill in the air, seeing bursts of colors in the turning leaves, carving pumpkins, and wearing sweaters!  And I love the kitchen to be filled with the smell of cinnamon and pumpkin. T his pumpkin bread recipe has become a new seasonal favorite in our house. It is easy to make and utilizes simple ingredients. Plus, it combines pumpkin and chocolate, a perfect combination for fall baking. I recently made this recipe with Charlie's class at school. They have been talking about pumpkins and using them for different activities in class. Baking with 12 two-year olds is a little different than just baking with Charlie! It was really fun -  I will post some pics of my adventure soon. This recipe isn't real spicy and I think that makes it very kid friendly. Plus, there are lots of chocolate chips! 

Chocolate Banana Bread

I have been making this chocolate banana bread forever. Ok, not forever, but for almost 10 years. It definitely qualifies as a go-to recipe in our house. Great for breakfast or anytime. I had a former co-worker who swore he didn't like banana bread but loved this recipe.
