My go-to cookie recipe


Everyone needs a go-to cookie recipe. A fail-safe recipe. A recipe you can make at the last minute for those times when you forget until midnight the night before that you signed up to bring a dessert to the class party at school. A good go-to recipe requires a short list of ingredients you always have on hand, and a recipe so simple you could make it in your sleep. 





Most importantly, a go-to recipe has to turn out great every time. All my family, friends and co-workers have had these cookies at one time or another. They are even “award-winning cookies”! I won the cookie contest at my departmental picnic a few weeks ago. Award winning is in quotes because it was a small contest – more than one entry but less than 10, if you have to know. Small victory or not, I love making these cookies and don’t need an excuse or reason to do so. This is my go-to cookie recipe. Enjoy!



Charlie likes to help put in all the dry ingredients - especially the chocolate chips! He also likes the finished product.

Paige’s Go-to Oatmeal Chocolate Chip Cookies
Ingredients:

3 c oats
1 1/3 c flour 
1 1/2 c brown sugar
1 t baking soda
1/2 t baking Powder
1/2 t salt
3/4 c semi-sweet chocolate chips
1 c vegetable oil
2 large eggs
1 t vanilla extract

Directions:

Pre-heat oven to 375°C.
Mix all ingredients together in a bowl. Form into small balls and drop onto ungreased cookie sheet. Bake for 10 minutes until golden brown. Makes about 2 dozen cookies, depending on how much dough you eat while making them. :)

Note: The original recipe for these cookies was from a friend of mine when I lived in St. Louis. (Kim Cole, where are you?) I don't know where she got the recipe. I lost the one and only copy I had of this recipe recently and had to recreate these from memory. It took a few tries, but I think I got it.
