Ready for the weekend

I don't know about anyone else, but I'm ready for the weekend. It is going to be a beautiful Friday and I'm looking forward to a fun weekend with friends and family. Tonight we're planning to dye Eater eggs and tomorrow we're going to have a picnic and watch the KU women's rowing team compete. I'm hoping for more of this gorgeous weather. Sunday we will hunt Easter eggs, go to church (yes, we're those people, we're lucky if we make it Easter and Christmas!), and have an Easter meal with my family. Oh, and have our house ready for pictures by Monday because, wait for it....we're listing it for sale this coming week! Still lots to do to get the house ready, its going to be a busy weekend!

Charlie helped me make cupcakes for a party at his school and they turned out well. The toasted coconut really takes them up a notch. I made a short cut with the original recipe and used a vanilla cake mix. I like to make things from scratch, but I have learned that with cupcakes, it doesn't always pay off. Sometimes the box mix tastes just as good. I think the icing is what really makes them taste great and if you put a great buttercream icing with a box mix, know one will ever know the difference.
